With all this time spent in the kitchen lately we find ourselves overrun in kitchen scraps of all sorts—left over onion, remnant herbs, a chicken carcass or two—and that us got us thinking about stock. No, not the up-and-down, buy/sell market kind—we’re busy in the kitchen to keep our minds OFF of all that for a while. We’re talking cooking stock, the ultra-easy homemade secret weapon for foolproof soups and sauces that you’ll want to have on hand pretty much ALWAYS. And that got us thinking about how much we love Prepworks ProKeeper Freezer Pods. Let’s explain.
Homemade stock used to live in two categories in our house. It was either 1) we don’t have it all, or 2) we have about a cup and half of leftover stock that slowly dies in the fridge for a few weeks until I finally throw it away, never having found an immediate use for it.
Not anymore, friends! Freezer pods are a genius way to preserve small quantities of stocks, sauces and purees for later use – my fridge and freezer are a whole new level of organized.

Risotto Bites with Parmesan and Sun-Dried Tomatoes
It’s not often that heathy AND golden-brown-and-crispy go together. But they do today. These crispy & cheesy risotto bites make a great appetizer or entree.
Ohhh man. There are so many ways to serve this delicious appetizer. You can serve it on a bed of marinara with a fork – or on a platter with a skewer and a little dipping sauce. Either way, your guests will love you – they’re crispy on the outside with a cheesy, creamy interior. And the best part is that they can be made in the Air Fryer or the oven to keep things easy (no messy grease splatters to clean up!) and, coincidentally, they’re a lot healthier.
Mediterranean Cauliflower Rice
This dish has the benefit of BOTH being a delicious low-carb meal option and an easy way to add more veggies to your diet.
Don’t let the cauliflower rice fad fool you – it’s both a delicious and healthful way to cut back on carbs and add more veggies to your diet in an easy way. Whirl some chopped cauliflower in a food processor or use March’s Gadget of the Month to get the cauliflower “rice” – which looks a bit more like couscous if you ask us – and sautée with olive oil, garlic and onions for a flavorful side dish or main meal.
