The caviar of the South, Pimento Cheese spread can (and is) used for just about anything. Served as a spread on crackers or celery, dipped with corn or tortilla chips, mixed in with yolks for deviled eggs, added to grits, or slathered over hamburgers or hotdogs. Our favorite guilty pleasure: use the gold stuff to replace the sliced cheese in a grilled cheese sandwich. Tillamook cheddar purists will disagree, to be sure.
