Here in the land of farm to table cooking, when it comes to salsa we typically think Pico de Gallo. And, boy, can that spoil us. Because nothing, NOTHING, is better than a good tomato in the summer. But what about when you get a hankering for Mexican and the tomatoes are out of season? You could settle for some flavorless, mushy red balls from parts unknown, masquerading as the real deal. You could wait til your CSA comes through with the real deal. Or you can reach for canned tomatoes. Canned tomatoes? Yup, canned tomatoes! They’ll give you a much denser texture, much like what you might find at your local taqueria. And it is ready no matter what month you get that itch for chips.
