Some folks like to look down their nose at the humble iceberg lettuce. It has no nutritional value, they say. It’s devoid of flavor, too watery, they complain. There are more flavorful greens out there, to be sure, and plenty of them pack more vitamins and minerals. But who among the leafy can match iceberg for its crisp crunchiness? Add that to some creamy cheesy dressing, the saltiness of warmed bacon and the sting from a fresh red onion and you have a great American Classic: The Wedge!
