Rachel’s Gingerbread recipe was a hit at Ladies Night Out on NE Broadway, here it is for all of you that asked for it:
2 teaspoons cinnamon
2 teaspoons ginger
2 teaspoons cloves
1/2 teaspoon salt
1 cup hot water
3/4 cup apple sauce
1/2 cup white sugar
1/2 cup butter
1 egg
1 cup molasses
2 1/2 cups flour
1 1/2 teaspoons baking soda
Combine all dry ingredients; flour, spices, baking soda and salt and mix well.
Combine melted (but not hot) butter, eggs, sugar and molasses.
Mix together the dry ingredients and creamed mixture.
Once combined add apple sauce and water and mix well.
Cook at 350 degrees in a greased pan. Fits perfectly in the Nordicware Gingerbread Man Pan sold at Kitchen Kaboodle. Can also be made in a 9″ baking pan or a loaf pan. Make sure to spray with Baker’s Joy to ensure a perfect release. Check after 45 mins, but will likely take about 55 mins. Use a cake tester to determine when the cake is done cooking in the middle. Serve with whipped cream.
